Our Involtini di Melanzane sott’olio (eggplant rolls in oil) are a tribute to the culinary tradition of Salento. Each roulade is prepared with artisan care, using fresh, locally grown eggplant and genuine ingredients that enhance its unique flavor.

The process begins with hand-cutting the eggplant into thin slices and grilling them to perfection for an irresistible smoky flavor. Each slice is then rolled with a rich filling of sun-dried tomatoes, fresh caroselle (a local variety of cucumber) and a touch of wild fennel, which adds an unmistakable aromatic note. Steeped in our extra virgin olive oil, produced directly from our own olive groves, these involtini preserve the freshness and intensity of the flavors intact. The recipe, handed down from generation to generation, is a perfect balance of sweetness and savoriness, made even more special by the quality of the ingredients.
