Olives in brine represent the core business of our company. For years we have been passionately processing different varieties of olives, from both conventional and organic farming, including Leccino, Cellina di Nardò and Nocellara. We carefully follow every stage of the supply chain: from the selection of the most suitable plots, to harvesting, to in-house processing, guaranteeing accurate controls and consistent quality.

The production process involves selection, defoliation, washing and placing in drums to obtain a ready-to-sell product that preserves intact the authentic aromas and flavors of Salento. Thanks to an efficient organization and an experienced staff, La Cupa reaches an annual production of 1,000,000 kg of olives in brine, both whole and pitted, appreciated by the main operators of the large-scale retail trade and food service sector
